Only few weeks after the Grand Finale 2017 in Lyon, Mexico is ready for the National Selection! On February 9th 2017, during the Sirha Mexico, 10 candidates divided in 2 categories (sugar and chocolate) will fight for a spot in the Latin American round of Coupe du Monde de la Pâtisserie : the Copa Maya 2018.

The competing chefs will have to prepare :

For the sugar category

  • two frozen fruits entremets
  • two chocolate entremets
  • an artistic sugar piece

For the chocolate category

  • two frozen fruits entremets
  • eight desserts on a plate including chocolate
  • an artistic chocolate piece.

The best candidates of each category will form the Mexican team and win their ticket for the Copa Maya 2018, the final step before the Grand Finale 2019 in Lyon.
